The real origin of Panettone remains a dilemma given the many legends and stories around it. According to one of the legends, Panettone is the result of a culinary mistake. Apparently, on Christmas day, the chef of Ludovico il Moro forgot the cake in the oven and ended up burning it. To recover the situation, Toni, the apprentice, baked a cake with the ingredients he had to hand: water, flour, eggs, and butter. The experiment was such a success that they decided to call it after its inventor, i.e. “Pan del Toni” (Toni’s bread). Our Panettone is made with select ingredients and without food preparations and frosting. Unlike Toni’s ones, our Panettone takes some patience to make because we leave it to leaven for a long time. That’s why our Panettone is soft and incredibly fragrant - a joy to be experienced even after the festivities.

Traditional Panettone
Another legend tells about a nun who, as a blessing, drew a cross with a knife on the dough she made with sultanas and candied fruit. Our Traditional Panettone is for those who love the original version, i.e. with candied orange peel and sultanas. It’s part of every Italian’s childhood memory. A cake to be eaten with your hands! Christmas wouldn’t be the same without it. But even after the holidays are over, Italians indulge in it to extend the magical atmosphere of Christmas. Serve it with custard, mascarpone or Chantilly cream to satisfy even the most luxury-loving guests.

It smells like the cakes nonna used to make when we were little when a freshly-baked sweet was a joyful surprise. Heat it in the oven for a few minutes before serving to release all its aroma. If any is left over (highly unlikely!), you can pop it in the toaster and enjoy it for breakfast. Today, Panettone can be enjoyed all year round. It’s delicious paired with dark chocolate ice-cream if you like strong tastes, or with milk chocolate if you prefer more delicate ones. Summers just won’t be the same anymore.

The origins of Panettone are also romantic. This time, the legend has it that Toni was a baker and a father. One day, a gentleman, who was in love with his daughter, pretending to be an apprentice in Toni’s bakery, made such a heavenly cake that she at once accepted his marriage proposal. Perhaps that cake didn’t have chocolate chips in it, but we like to think that it did. After all, what’s more romantic than chocolate? Our Panettone with chocolate chips is perfect for those who love tradition but can’t do without a note of cocoa. You can pair it with a glass of sweet wine, spumante or Passito. It’s also excellent with grappa or with your favourite spirit.

Not everybody knows that Panettone should never be sliced before serving. As a ritual, it’s the guest who should slice it first to be enveloped by its fragrance. Christmas is not Christmas without a note of cinnamon. According to the legend, the phoenix would use it to build its nest, transmitting its healing and therapeutic powers to the spice.
